Stuffed Blueberry French Toast

INGREDIENTS:

  • Blueberries, two cups
  • Milk (fat free), one cup
  • Egg whites, two large
  • Canola oil, one tbsp.
  • Egg, one large
  • Cottage cheese, half cup
  • Sugar, 1/3 cup
  • Vanilla extract, one tsp.
  • Whole wheat bread, eight slices

INSTRUCTIONS:

  1. Take a blender and put in it half cup milk, sugar and cottage cheese until smooth.
  2. Take a shallow bowl and put egg, vanilla extract, egg whites and half cup milk in it, stir until smooth.
  3. Take four slices of bread and divide the blueberry mixture equally among these slices. Now top these slices with the remaining four slices.
  4. After heating the large skillet over medium heat, grease it with oil and place the bread in it. Cook it until bread colour changes to brown.
  5. Before turning the other side of the bread, top it with the oil. Now cook again for two to three minutes until you notice its brown.
  6. Serve as soon as its cooled.
