Curried Egg Salad Sandwich

INGREDIENTS:

  • Chopped hard cooked eggs, two
  • Salt to taste
  • Pepper, 1/8 tsp.
  • Plain Greek style low fat yogurt, 2 tbsp.
  • Red bell pepper, chopped, 2 tbsp.
  • Curry powder, ¼ tsp.
  • Toasted rye bread, two slices
  • Fresh spinach, half cup
  • Orange, one

INSTRUCTIONS:

  1. Take a small bowl and put eggs, curry powder, pepper, bell pepper, salt and yogurts in it. Stir well these ingredients.
  2. Take rye bread, first place spinach, and then eggs on the top and serve.
